Spicy Mala Chicken & Egg Stir-fry

The Method

How it's made

    Heat the mustard oil and soy oil in a wok or skillet over medium-high heat until shimmering.

    Add the sliced onion and minced garlic, sautéing until fragrant and the onions are translucent.

    Push the aromatics to the side of the pan and pour in the beaten eggs, scrambling them until just set.

    Add the pre-cooked black pepper chicken slices to the pan and toss everything together to heat through.

  5. 05

    Sprinkle the mala powder over the mixture, tossing vigorously to ensure the chicken and eggs are evenly coated with the spice.

  6. 06

    Remove from heat immediately and serve hot, garnished with scallions if desired.

Mustard oil has a pungent flavor; if you prefer a milder taste, use more soy oil and a smaller amount of mustard oil.

Notes from the Kitchen
  • Since the chicken is pre-cooked and seasoned with black pepper, taste before adding extra salt as the mala powder may already contain seasoning.
