The Method

How it's made

    Heat one tablespoon of oil in a wok or frying pan over medium-high heat.

    Pour in the beaten eggs and scramble until just set but still soft. Remove from pan and set aside.

    Add the remaining oil to the same pan and fry the garlic until fragrant.

    Add the tomatoes and stir-fry for 2-3 minutes until they begin to soften and release their juices.

    Stir in the oyster sauce, soy sauce, and sugar.

    Return the cooked eggs to the pan and gently toss everything together.

    Garnish with green onions and white pepper, then serve immediately over hot jasmine rice.

Use very ripe tomatoes for a deeper, more flavorful sauce.
