Thai-Style Crispy Sausage Fried Rice

The Method

How it's made

    Heat one tablespoon of oil in a wok or large skillet over medium-high heat. Add the sausage slices and fry until browned and crispy on both sides.

    Push the sausage to one side of the pan and crack the eggs into the empty space. Scramble them lightly until just set, then break them into bite-sized pieces.

    Add the cold jasmine rice to the pan, breaking up any clumps with a spatula, and stir-fry for 2 minutes until hot.

    Pour the fish sauce, soy sauce, and sugar over the rice. Toss continuously for another 2 minutes until the rice is well-coated and slightly toasted.

    Remove from heat, stir in the black pepper, and serve immediately with optional lime wedges or sliced chilies.

Using day-old cold rice is the secret to getting a firm, non-mushy texture for fried rice.
